This recipe comes from an old cook book ‘TRATTORIA’ by Patrica Wells . I enjoy reading this book because all recipes are from a correction of actual small restaurants called ‘Trattoria’ in Italy. In my opinion this recipe is a kind of old-fashioned chocolate mousse rather than flan. Flan should be much litter, no heavy cream and more eggs..makes lighter and softer that is “Flan” to me, however I made it without hesitation, and result is exactly I was thinking about it. Particularly where I reside, south of San Francisco, has the most mild weather around. It is not only in Bay Area’s best but it’s the best in the entire California. Local strawberries are beautifully displayed in the produce markets now, yet their taste is not so great at the moment…cherries should be coming soon.
